Global Openings Bars Manager

The Role
This is an exciting new role for a bars specialist to join a dynamic, rapidly growing restaurant group - it will form part of a new central task force support team based out of London to project manage and drive the companys accelerated path of global openings.
You will take the lead in the pre-opening development of the bar program, product sourcing, supplier engagement, management of resource, meeting task timelines, pre-opening financial mapping of beverage GPs and labour forecast, recruitment, training and handover of site.
In addition, you will be involved in creating and assisting in further advanced beverage training needed at opened sites in the UK and globally, to keep venues operating within brand guidelines and to raise confidence to drive business goals.
Working closely with the International Operations Director and Head Office teams on curating, opening, executing and demobilising pop ups/residencies and company satellites for pushing brand awareness in new markets while capturing new streams of revenue.
Main Duties
Overseeing all bar & beverage areas including but not limited to; procurement, system setup, recipe & brand standard implementation, ordering / receiving / stock controls / counts / invoicing, labour control, and training.
Further assisting on coaching new management team on implementing a robust beverage program for incoming new venues and pop ups while also supporting opened venues maintain branded beverage programs.
Overseeing completion of tasks, adhering to agreed timelines, for delivering a well-organised, trained beverage team and well executed beverage program for opening of new venues and/or pop ups.
Ensuring clear and concise communication of deliverables and timelines to Task Force management and incoming new site management.
Providing clarity to ensure operations are set to deliver the best beverage and service experience to our valued guests.

Leading on preparing pre-opening bars and beverage strategies and timelines. Focusing on product procurement, tastings, recipes, training programs and full beverage program rollout.
Working with key suppliers globally to assist in staff trainings to further build knowledge and confidence within the beverage program, whilst adhering to company standards of beverage quality (ingredients & vessels), preparation, recipes, presentation and working in line with any local and/or global contract(s).
Working with heads of department to ensure all collaterals, materials and communication is within brand guidelines and/or adheres to global contracts (if applicable).
Hold regular meetings with management to ensure constant communication and be available for other staff members who need guidance.
Reviews efficiencies of operations and create solutions to smooth communication, effective workflow and time management along with maximizing budget allowances.
Assist IOD in processing end-of-project reporting. Summarising points of project that worked well, needs improvement and needs a full review due to failings.
Relevant management of commercial aspects pertaining to budgets, GPs, finance reporting, marketing & supply chain.
The Candidate
Experience & Background:
A minimum of 4 years in a bar management role within a luxury, lifestyle & high-end brand.
Must showcase a substantial background in developing & managing large teams, creating beverage programs, dealing with suppliers, firm understanding of beverage trends & cocktail development, strong understanding of industry beverage standards.
Yearly revenue generation of £2.5 - 4 million.
Ideally, have opened large scale restaurant(s) from pre to post opening, 150+ covers, multi-use space with a staffing level of 120 or more.
Ideally have run or been a part of operations in multiple countries.
Ability to travel extensively and for long-periods in the UK and internationally this role requires the ability to be very flexible and potentially at the last-minute, supporting openings and functioning venues for long stays, up to 3 months, in one city for pre to post opening support.
Must have the ability to travel at short notice for long periods.
Skills & Abilities:
Strong people management skills and experience leading a team highlight the importance of leadership in this role.
Sound financial management skills, including clear understanding of beverage GPs, labour & rota forecasting, labour & rota cost management, wastage controls and cross training incoming management.
Familiar with the lifestyle brand concepts, including creation of beverage program to fit brand identity, worked with marketing to curate menu offerings around activations, and events, suggests an understanding of the broader experience The company aims to offer beyond just its cuisine.

Communication & Relationship Skills: Excellent written and verbal English communication skills, along with strong interpersonal and negotiation skills. Strong background in dealing with suppliers along with large brands to maximise beverage costs, increasing brand awareness and driving marketing activations.
Operational Efficiency: A sound understanding of processes and operational efficiency suggests a focus on streamlining operations to enhance overall performance. Strong background in implementing structure, process, SOPs and holding the team to account for learning and following these guidelines.
Problem-Solving & Pressure Management Skills: Strong problem-solving skills, coupled with the ability to identify and develop solutions, showcase the candidate's ability to address challenges that may arise in hitting target deadlines to open a venue on time. The ability to work under pressure and excellent time management skills highlight the candidate's capacity to handle the demands of opening venues.
